With farming skills acquired from her father, San Jacinto farmer Isaura Martínez has dedicated her life to the cultivation, processing, drying and storage of excellent coffee. Since 2014, she has strived for regular leaps in cup quality, moving to a natural process in 2017.

During the natural drying process, farmers leave the fruit of the cherry intact, leaving the sweet aromas and flavors in the tasting notes of the roasted bean.

The farm’s name of “San Jacinto” translates to Hyacinth, whose namesake flower is naturally found on the surrounding land.
