Most people visit a specialty coffee shop, order their drink, and watch the magic happen from the other side of the counter. Espresso machines hiss. Milk pitchers swirl. A barista tilts a cup and—almost casually—a little heart or rosetta appears on the surface. It looks effortless.
But here’s the thing: it isn’t effortless at all. It’s craft.
That’s exactly why Offshore Sessions, our monthly hands-on workshop series at High Tide Coffee, exists. We wanted to create something that brings our local coffee community a little closer to the process. Not just tasting great coffee but understanding it.
And honestly? It’s way more fun when you’re holding the milk pitcher yourself.
So… What Are Offshore Sessions?
Offshore Sessions are our casual, small-group coffee workshops where guests get to spend an evening learning directly from the baristas who work the machines every day.
Think of it less like a class and more like hanging out behind the bar.
We talk shop. We share tips. We laugh when the first pour turns into something that looks more like a cloud than a heart (that happens to everyone, by the way). And somewhere along the way, something clicks.
These sessions are built for anyone curious about specialty coffee. Locals who stop by after work, weekend beachgoers visiting town, or folks who simply want to understand why that cappuccino tastes so good.
Coffee culture around coastal Orange County has grown fast, from San Clemente to Laguna Niguel, and we love being part of that wave.
March Theme: The Art (and Science) of Latte Art
This month’s Offshore Session focuses on one of the most requested skills we hear about: latte art.
Sure, those little designs look beautiful on top of a latte. But they actually tell a deeper story about technique. When the milk texture is right, silky, glossy, almost like wet paint, it blends with the espresso in a way that creates contrast. That contrast is what makes designs possible.
We’ll cover things like:

And yes, everyone gets time to practice. Expect a few crooked hearts and abstract blobs along the way, that’s part of the fun.

We love welcoming folks from across nearby communities too! Dana Point, Mission Viejo, even coffee fans visiting from Carlsbad who heard about the event while exploring the coast.

Our March Offshore Sessions: Latte Art workshops happen at two High Tide Coffee locations:

Each session runs about 90 minutes and keeps the group small so everyone gets real hands-on time with the espresso machine.
